View with the mooring attached to the ships trawl wire. The quick release is attached to the wire; the three legs of the release rigging go thru the lifting eyelets and back up to the quick release via a sash which captures all of the three point attachments.

Side view of the mooring rigged and ready to put over the side. Note the yellow polypro line - this is the release line for a safety pin which keeps the quick release from dropping the load when it hits the sea surface.
Once the package is approx 1m below sea-surface, the safety pin is pulled and the gear can be lowered to the deployment site. When the mooring hits bottom, the fulcrum of the quick-release pivots down, releasing the 3 point rigging from its grasp. The trawl wire is then brought back up to the surface which pulls the rigging back thru and free of the lifting eyes.
